Ingrédients

  • 6 egg yolks

  • 3/4 cup granulated sugar

  • 1 vanilla bean

  • 1 cup mascarpone cheese, softened

  • 1 1/2 cups heavy cream

  • 1 1/2 cups strong brewed coffee, cooled to room temperature

  • 3 tablespoons coffee liqueur (optional)

  • 24-30 ladyfinger cookies (savoiardi)

  • Cocoa powder, for dusting

Préparation

Prepare the Egg Yolk Mixture:


Split the vanilla bean lengthwise and scrape out the seeds.

In a large mixing bowl, combine the vanilla bean seeds with the egg yolks and sugar.

Whisk until the mixture is pale and slightly thickened.



Add Mascarpone:


Add the mascarpone cheese to the egg yolk mixture.

Beat until smooth.



Whip the Cream:


In a separate bowl, whip the heavy cream until stiff peaks form.



Incorporate Whipped Cream:


Gently fold the whipped cream into the mascarpone mixture until well combined. Be careful not to deflate the whipped cream.



Prepare Coffee Mixture:


In a shallow dish, combine the brewed coffee and coffee liqueur (if using).



Dip Ladyfingers:


Dip each ladyfinger into the coffee mixture, ensuring they are coated but not soaked.



Layering:


Arrange a layer of dipped ladyfingers in the bottom of your serving dish.

Spread half of the mascarpone mixture over the layer of ladyfingers.



Repeat Layers:


Repeat the process with another layer of dipped ladyfingers and the remaining mascarpone mixture.



Refrigerate:


Cover and refrigerate the tiramisu for at least 4 hours or preferably overnight to allow the flavors to meld.



Dust with Cocoa Powder:


Before serving, dust the top of the tiramisu with cocoa powder using a fine sieve.



Slice and Serve:


Slice and serve the tiramisu chilled.
