Struffoli is a traditional italian dessert, specifically from the Campania region, and it consists of small, deep-fried dough balls that are served with honey. A delightful treat hailing from the heart of Italy. We've taken the essence of this traditional recipe and added a touch of our own magic by infusing it with the warmth of vanilla. This adaptation pays homage to the rich culinary traditions of different regions, where the art of making Struffoli is as diverse as the landscapes that inspire them. Ingrédients

For the Vanilla-Infused Dough:

  • 2 cups all-purpose flour

  • 3 large eggs

  • 2 tablespoons unsalted butter, melted

  • 1 tablespoon granulated sugar

  • 1/4 teaspoon salt

  • Zest of 1 orange

  • 1 teaspoon pure vanilla extract


For Frying:

  • Vegetable oil, for frying


For the Vanilla Honey Glaze:

  • 1 cup honey

  • 1/2 cup granulated sugar

  • Zest of 1 lemon

  • 1 teaspoon pure vanilla extract

  • Colored sprinkles (optional)

Préparation

Prepare the vanilla-infused dough:


In a large mixing bowl, combine the flour, sugar, salt, orange zest, and vanilla extract.

Make a well in the center and crack the eggs into it.

Add the melted butter.

Mix the ingredients until a dough forms.

Turn the dough out onto a floured surface and knead until it becomes smooth.



Shape the dough:


Divide the dough into small portions.

Roll each portion into a thin rope, about 1/2 inch in diameter.

Cut the ropes into small pieces, about 1/2 inch in length.



Fry the Struffoli:


In a large, deep pan, heat vegetable oil over medium heat.

Fry the dough pieces until they turn golden brown.

Use a slotted spoon to remove the fried dough and place them on a paper towel-lined plate to absorb excess oil.



Make the vanilla honey glaze:


In a saucepan, combine honey, sugar, lemon zest, and vanilla extract.

Heat the mixture over medium heat, stirring constantly until the sugar dissolves and the glaze thickens slightly



Combine and garnish:


Add the fried dough to the vanilla honey glaze and stir until all the pieces are well coated.

Using two forks, shape the coated dough into a mound or wreath on a serving platter.

If desired, sprinkle colored sprinkles over the top for a festive touch.



Let it set:


Allow the vanilla-infused Struffoli to sit for a while to let the honey glaze set.
