Ingredients

For the Crust:

  • 2 cups graham cracker crumbs

  • 1/2 cup unsalted butter, melted

  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 4 packages (32 oz) cream cheese, softened

  • 1 cup granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup dulce de leche

For the Topping:

  • 1 cup dulce de leche, for drizzling

  • Whipped cream (optional)

  • Chopped nuts (optional)

Preparation

Preheat the Oven:

Preheat your oven to 325°F (163°C).

Prepare the Crust:

In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to create an even crust. Bake the crust for 10 minutes, then remove from the oven and allow it to cool while preparing the filling.

Make the Cheesecake Filling:

In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and continue to beat until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Finally, fold in 1 cup of dulce de leche until the mixture is smooth and evenly blended.

Assemble and Bake:

Pour the cheesecake filling over the prepared crust in the springform pan. Tap the pan gently on the counter to remove any air bubbles. Bake in the preheated oven for about 60-70 minutes or until the center is set. Allow the cheesecake to cool in the oven with the door ajar for about an hour, then transfer it to the refrigerator to chill for at least 4 hours or overnight.

Add Toppings:

Once the cheesecake is thoroughly chilled, drizzle the remaining dulce de leche over the top. Optionally, garnish with whipped cream and chopped nuts.

Serve and Enjoy:

Slice the Dulce de Leche Cheesecake into servings, and enjoy the rich and creamy goodness with the delightful caramel flavor of dulce de leche.
